
I got a new cook book for Christmas. I decided to try making dinner from it tonight. It is called Deceptively Delicious and it's recipes that sneak healthy ingredients into everyday food. I have been really frustrated with making dinner lately because it is never eaten. The kids say it is gross and I feel like I just wasted half my night preparing it. I decided to see if I could get them to eat this food with the veggies secretly added in.
I made chicken nuggets with a spinach puree. You can use other vegetables but I used spinach because it was the quickest to puree. The chicken was green, but I just told them it was St. Patrick's day chicken. They fell for it, and quickly gobbled up all the chicken. Stephen even loved that I was going "healthy." We had little dishes of different dipping sauces and it was a hit. Aiden kept asking what made it green and I just told him it was food coloring. Next time I'll make it with a lighter colored vegetable and they will never know. We also had Cauliflower mashed potatoes and those were also a hit. I actually felt good about spending the hour making dinner tonight. I was feeling ambitious. I decided to try a dessert from the book. I made oatmeal flax chick pea cookies. This was pushing it a bit for Aiden. He knew they tasted different but with a glass of milk to dip them in he ended up eating four!

I think I might be on to something. I'm pretty excited for our sweet potato french toast in the morning.
Here are the puree's I made tonight. They are all stocked up in the freezer so I just have to pull one out and go.

That is such a good idea! I need that book. I would love to trick Caden into eating healthy. Way to be a good mommy :)
